Solana's Baptism

The Michaels’ / Szymanskis’ are such a wonderful family and I am thankful they are a part of my life. Solana’s baptism was this last Sunday, where she celebrated with all of her family. The tradition of the Filipino culture is to cook Lechon , or pig, at these family gatherings. Mr. Michael just bought a spit roaster and was dying to use it. Some other food items that they usually cook are pancit (rice noodles with pork and vegetables), lumpia (fried egg rolls with beef) , turon (fried egg rolls with banana), fish escabeche (fish marinaded in vinegar with peppers), suman (rice cakes wrapped in banana leaves), sweet and sour meat balls, puchero (beef with potato and peppers), satay (beef on skewers), gulaman (type of jello) and how can I forget just regular white rice! As you can tell, most every of these dishes are meat dishes. Well this fiesta food was more than delicious and the guests were able to take home a to-go container full of this yummy food!
